Lemon Myrtle Pasta – homemade! Zitronenmyrthe Nudeln- hausgemacht.

Christmas is coming up and lots of people are baking goodies but at our house, we are making our own pasta not just to eat but for Christmas gifts too.  Well, actually, my husband makes it and the children and I help to separate the noodles so that they can dry nicely.  This pasta with Lemon Myrtle spice from Australiss is so good that if you make it once, you will make it again and again.

This is how we make the pasta.

5oo grams plain flour

5 eggs ( We get them fresh from an organic shop  or the farmer)

Nearly one tablespoon of olive oil or Macadamia Oil infused with lemon myrtle.  (Available from Australiss, Erlangen)

1 teaspoon of Lemon Myrtle spice (Available at Australiss, Erlangen.)

Make a well in the flour and crack the eggs into the hole.  Work the flour and eggs into a dough and add the oil and spice and keep kneading!!  (You can double this quantity as we do because then we have a ready stock of dried homemade pasta that is really tasty!)  After you have made the dough, just leave it to rest a while.  Go and have a coffee with a friend or your partner, read a book to the kids.  Then slice the dough into about 1cm thickness and feed through a pasta machine.

Feed it through the machine.

Then leave these wide strips of pasta to rest but don’t let it dry out too much either.  Go by feel.

The next step is to take these strips and roll them through the machine to make fettucine.

Look at these noodles...............

Once the noodles are cut, get the children, a friend, a wife, a lover, a neighbour……….anyone to help to lightly throw up the noodles gently to separate them.  We allow them to dry on a clean, cotton cloth.

You can cook them in salted water immediately and the rest can dry overnight.  They store well and also , they make lovely gifts if you bag them up nicely and tie them lovingly with a nice ribbon.  Yummy, tasty and healthy.

Australian scientists last year, did more research on Lemon Myrtle and found it to be very healthy and have stated that all Australian supermarkets should sell this product as it is so healthy.
