Best ever Australian Lemon Myrtle Pikelets………

One great childhood memory of growing up in Australia was of my Mum making pikelets for us.  The Italian community around us just loved them and this urged her to always bring a large plate of pikelets for every get together.

Pikelet Recipe.

1 cup of self raising flour

1 egg

Half a cup of milk

Quarter cup of sugar

1 tablespoon of melted butter

1 teaspoon of lemon myrtle spice

Beat the flour, eggs and sugar together and add half the milk.

Use a mixer, whisk or a knife to mix the batter.

Beat or whisk it to a dough and add the rest of the milk.  Beat until smooth. Lastly, add the melted butter.

If you have time, refrigerate for a couple of hours before cooking but if you are in a hurry, make them anyway!

Mix the dough again  to check consistency.  (You can always add a bit more milk but the mixture must not be too runny.)

I follow Mum’s way of pouring the mixture onto the hot pan by putting the pikelet dough in a jug.  I pour the mixture onto a hot frying pan and when little holes appear, flip the pikelet over.  Turn the heat down once you get going.

The taste of the lemon myrtle is exotic and fresh but IT IS SO GOOD FOR YOU!!

If you are making this recipe to take to a party, DOUBLE IT!  Watch them disappear before your eyes.  The lemon myrtle taste is so refreshing; pikelets are easy to eat because there is no mess, (perfect when kids are hungry and running about at a party) and so easy to make.

Pikelets are also known as drop scones or flapjacks.

  2. Hi Moira ! 941 hits ! Well done you ! We call these pancakes ! My mum made them when we were little too !!! She still makes them when I go home and we eat them warm with raspberry jam ! More mess though but yummy and the mess is worth it ! Lemon Myrtle sounds lovely. When I make them I think I’ll call these Moira’s Posh Pancakes !!!! Keep Blogging ! M x
